My ten minutes

What do you do when you have just ten minutes of free time? Blog.

Ten minutes, because when my ten minutes are up, I have to wake my pretty little girl, bundle her up, and take her out to be tortured. And by tortured, I mean they're going to stab her in the leg. Three times. With needles. We've done this needle thing once before, and she cried the saddest cries I've ever heard.

She's older now, so she'll be a little more aware of what's going on. I'm worried that she's going to be even more scared than the first time. My poor girl. I think if she realized what was going to happen later today, I would still be more scared than she would be.

As for me? I've been feeling odd today. I can't put my finger on why. Although lately I have been waking up feeling a bit.. nauseous lately when I get up through the night with the baby.

I know what you're thinking, and no, that is definitely not the reason for it. I think it's time to start putting a little more effort into 'me'. Most days it still comes down to making the decision between getting to relax for a few minutes, and getting to cook a half decent meal. It's time to start opting for the decent meal a little more often than I have been. My body is definitely feeling the lack of good food.  Starting next grocery day, I'm going to make an effort to be better to myself.

And now? It's time to wake up my pretty baby.

For the love of food

Oh Pinterest. It's probably as addicting as crack. I wouldn't know as I haven't tried crack but man am I ever addicted to Pinterest. I've used it a bunch lately to help me out in the kitchen. And the verdict? Well, read on.

I tried Foolproof peanut butter fudge. Just two simple ingredients. It's really peanut buttery, but still yummy. Great if you want a super fast and easy fudge fix. Plus, if you didn't know what the ingredients were, you probably wouldn't guess.

I tried out oreo cheesecake cupcakes. The recipe was easier than I expected. The only problem was I saw 2 packages of cream cheese, and that's what I used. It turns out that my packages of cream cheese are larger than the recipe called for. I think after the math, I had about 50g more cream cheese than I needed, but by then they were already in the oven. They still taste okay, but they're a bit cheesier than I'd like.

I had a helper for these.

Peanut butter no bake cookies. I made these once before, but this time they turned out even better. I ate so many of them for a few days after, but luckily I stuck some in the freezer to eat closer to Christmas. I love Christmas baking.

Pizza biscuits. So yummy, except I had all my cheese and pepperoni right in the middle. Next time I want to mix it into the dough more, not all in one spot. Still a great snack. Very quick to make and cook.

Pizza casserole. Probably the best thing I've made. Even the leftovers taste great.

And the newest thing I made from Pinterest - Pizza grilled cheese. Also very yummy. I didn't dip in pizza sauce, I spread pizza sauce on the inside of each piece of bread so it's cooked right in.

It's amazing how much you can make with one package of pepperoni and one small can of pizza sauce. I'm in pizza-freaking-heaven.

Pinterest is so good.

Donair Pita Pizza!

Day 04 – What you ate today

Today I am supposed to talk about what I ate today. You probably don't even want to know the sadness that have been my meals lately, but I will share with you one awesome thing that I've been eating lately, and had for lunch today:

Quick and Easy Donair Pita Pizza!

You need:
 - A package of pitas
- Grated mozza cheese
- Donair meat (spicy, regular, strips, round shaped, whatever you like)
- Donair sauce
- An oven or toaster oven

1. Spread donair sauce on the piece of pita bread
2. Spread donair meat on top of the donair sauce
3. Sprinkle with as much grated cheese as you like, and I like a LOT
4. Bake in the oven or toaster oven at approx 375 F until the cheese starts brown a little in spots
5. Enjoy the amazingness that you have created.

Stolen Donair Sauce Recipe

2/3 cup canned evaporated milk
2/3 cup sugar
1/4 cup white vinegar
1/2 tsp garlic powder
Stir canned milk, sugar and garlic powder until sugar is dissolved. Add vinegar and continue mixing. The quicker you add the vinegar and the less you mix (I usually give the spoon 3 or 4 turns around the bowl), the thicker the sauce will be. Let sauce sit for at least one hour in refrigerator before using.

Try it. It is amazing.

Curious about other things I ate today? Special K Chocolatey Crunch bar. So yummy.

Day 01 – Introduce yourself
Day 02 – Your first love

Whipped Peanut Butter

I almost picked up a jar of this creamy stuff when I first saw it in the grocery store. It was on sale, and I am a sale addict. But logic won this argument and I left it behind due to low funds, and two almost full jars of regular peanut butter already at home.

I was pretty excited when I was contacted by Kraft to test out the product and write my opinion on it.

I got quite into it and started making peanut butter oatmeal cookies, something I've never tried. I had oven issues and burned them so my cookies were a big fat fail. The dough tasted pretty awesome though.

I definitely enjoyed it in other ways. They don't lie when they say it can be used as a dip.

I've dipped brownies, store-bought chocolate chip cookies, and crackers in it. My favorite is the cookies, I'm eating some now.

Basically it's a softer, lighter peanut butter and I am in love.

PS. My Mom is baking the leftover dough tonight to see if the second batch of cookies might be a success.

Disclosure: I received this Kraft product in exchange for doing this post. The opinions expressed are my own and are in no way influenced by the receipt of this product.

Meals for a Week

I was just reading Sometimes Sweet's post from yesterday before I wrote this. I know there are probably plenty of people who do this, but I just love her idea of planning their meals for every night of the week. That would really make grocery shopping so much easier. Let's try that out.

Friday - Pay day, let's eat out!
Saturday - Butter Chicken wraps
Sunday - Lasagna
Monday - Something Old El Paso
Tuesday - Homemade Mac and Cheese
Wednesday - Fries with the works
Thursday - Bacon Cheeseburger Roll Up
Friday -

It took me awhile to come up with that list, and even that I can't finish it. I need new, exciting ideas. But at least it will be payday on Friday and we can finally eat some real food again. I'm craving an omelet badly.

I'm finally down the the homestretch.. There is only 14 hours of work left before I have two days off. My first since Valentine's day. Much needed.

The final episode of the Bachelor was last night. I could whine about how he picked Vienna, but that's been done to death already. I found it amusing how he talked about Tenley being perfect for him, how he would be so happy with her, and so on. About Vienna, he said several times that she was immature, that she was fun and sexy. Doesn't sound like you're looking for a wife, but more like you're hitting your midlife crisis and were looking for the "ditzy blonde secretary" that men cheat on their wives with. Not exactly marriage material, but whatever makes you happy.

I'm just super excited that Ali will be the next Bachlorette. I've never watched these shows before but it's nice to finally enjoy a little tv again.
